Zalabia is a beloved dessert in Yemen, often enjoyed during festive occasions and gatherings. Traditionally, it features a sweet, syrupy glaze and is deep-fried to a crispy texture, making it a delightful treat. The dish reflects the rich culinary heritage of Yemen, where flavors like cardamom and saffron are cherished. Today, Zalabia can be found in various Middle Eastern cuisines, each with its own twist, showcasing the dish's adaptability and popularity across cultures.

Put 6 and 3/4 cups of flour in a mixing bowl.
In a separate bowl, combine 2 tablespoons of dry yeast, 1 tablespoon of sugar, and 1 cup of warm water. Mix and let it sit for a few minutes.
Add 1 teaspoon of salt to the flour.
Add 1 egg and 1 cup of warm water to the flour and mix to form a dough.
If the dough is dry, add another cup of warm water until it becomes sticky and well mixed.
Let the dough rise for about 30 minutes to an hour until it doubles in size.
After rising, wet your hands and mix the dough again to incorporate any remaining flour.
Heat oil in a deep frying pan over medium heat.
Take small pieces of dough and fry them in the hot oil for about 2 minutes until golden brown.
Remove the fried Zalabia and place them on a plate to drain excess oil.
Slice the Zalabia and serve with sour cream and sliced tomatoes.
