Start by making the dough for the rolls.

Add 3 tablespoons of yogurt into a bowl.

Add 2 tablespoons of oil and mix well until the sugar and salt dissolve completely.

Add 2 kilograms of flour and mix thoroughly.

Knead the dough by gradually adding water until it is well combined and smooth.

Once kneaded, apply oil on top of the dough and cover it with a damp cloth to rest.

Prepare the chicken seekh kabab mixture by taking 3 kilograms of chicken mince.

Add 2 tablespoons of salt, 1 tablespoon of white pepper, 2 tablespoons of crushed red chili, and 2 tablespoons of kabab masala to the chicken.

Mix all the spices into the chicken thoroughly.

Add chopped fresh coriander, mint, green chilies, garlic, ginger, and 4 pieces of double bread that have been crushed into small pieces.

Mix everything well and add 4 tablespoons of oil.

Add 3 medium onions that have been chopped and drained of water, along with the chopped coriander and mint.

Add 20 grams of cream and 20 grams of butter, and mix everything together until well combined.

Prepare the charcoal for smoking by placing it on the stove.

Once the mixture is ready, place it in a bowl and cover it with aluminum foil to smoke it using the charcoal.

Let the dough rest for about an hour.

After resting, divide the dough into small balls for making the flatbreads.

Shape the balls into flatbreads and prepare to cook them on the stove.

Check the charcoal to ensure it is ready for smoking the kababs.

Shape the kababs by taking a small piece of the mixture and forming it with your hands, making sure to leave an imprint with your thumb.

Shallow fry the kababs in oil until they are golden brown on both sides.

Once the kababs are cooked, remove them from the pan and set aside.

Prepare the flatbreads by cooking them on the stove until they are done.

To assemble the rolls, place a flatbread on a surface, spread some green chutney on top, add lettuce, place a kabab, add some onions, and drizzle more chutney and tamarind chutney if desired.

Roll the flatbread tightly around the fillings and serve.
