Instructions

  1. 1Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. 2In a large mixing bowl, combine the chicken mince, ginger-garlic paste, chopped green chilies, coriander, mint, garam masala, turmeric powder, red chili powder, and salt. Mix well and form into seekh (cylindrical) shapes.
  3. 3Heat oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.

  7. 7Layer half of the partially cooked rice over the seekh in the pan. Sprinkle half of the remaining garam masala and some coriander and mint on top.
  8. 8Add the remaining rice and top with the rest of the garam masala, coriander, and mint. Cover the pan with a tight-fitting lid and cook on low heat for 15-20 minutes to allow the flavors to meld.
  9. 9Remove from heat and let it sit for 5 minutes before serving. Fluff the biryani gently with a fork before serving.
