Start by adding olive oil into a large pot.

Once boiling, add two chicken stock cubes and kosher salt to taste.

After 30 minutes, remove the whole chicken from the pot and let it cool down.

Shred the chicken meat, discarding the skin and fat, and return the meat to the pot.

Let the soup cook for an additional 30 minutes, stirring occasionally.
