Chicken - 500 gms
Mandi Powder - 2.5 Tsp
Olive Oil - 1 Tbsp
Rice - 2.5 Cups (uncooked)
Oil - 1 Tbsp
Chopped Onions - 1 Cup
Garlic Ginger (Crushed - 1 Tsp)
Mandi Powder - 2 Tsp
Raisins - Handful
Salt - 1 Tsp
Hot Water - 4 Cups
Almonds - Handful (Soaked and without skin)

Prepare the Hawaij spice mix by adding all Hawaij ingredients in a bowl and mix well.

Marinate the Chicken by adding chicken and sprinkling mandi spice mix, then mix well to coat the chicken with spices.

Drizzle olive oil over the chicken and mix again.

Keep the marinated chicken in an airtight container for 3 to 4 hours or overnight for best results.

Set the baking dish with aluminum foil.

After marination, place the chicken in the dish and prepare for baking.

Wash and soak the uncooked rice for an hour.

In a heating frying pan, add chopped onion and sauté for a few minutes until they start to change color.

Add crushed ginger garlic to the onions and mix well.

Turn off the heat and add handful of golden raisins, mixing well.

In a baking dish, add soaked rice and the sautéed onion mixture, then add salt and mix gently.

Pour hot boiling water over the rice and mix well.

Cover the pan using aluminum foil, marking it to create a vessel for steam.

Preheat the oven to 250°C (482°F).

Bake for 1 hour.

Broil the chicken for the last 15 minutes to achieve a nice color.

After baking, serve in a Mandi platter by making a rice layer and placing chicken over it.

Garnish with cilantro and almonds.
