pinch cooking oil
1/2 cup cooking oil (around 125ml)
10 pcs cardamom
2 pcs cinnamon sticks
15 pcs cloves
1 tsp peppercorn
12 pcs black pepper
2 large onions (chopped)
5 pcs dry lemon
1 tbsp cardamom powder
1 tsp pepper powder
salt to taste
chicken broth (as required)
5 pcs green chilies
4 cups basmati rice (around 800g, soaked for 30 min)
pinch red food color with 3 tbsp rose water

small charcoal
pinch cooking oil
2 medium tomatoes
3 cloves garlic
1 green chili

Prepare chicken legs (or whole chicken) with spices: cardamom, cloves, cinnamon, bay leaf, black pepper, onion, ginger, and salt.

Mix lemon juice, pinch of salt, red food color, and cooking oil to create a chicken fat mixture; brush it on the chicken.

Heat the oven to 250° and grill the chicken for 15-20 minutes.

For the mandi rice, heat cooking oil and add cardamom, cinnamon, cloves, black pepper, and chopped onions; sauté until fragrant.

Add dry lemon, cardamom powder, pepper powder, and salt; stir well.

Add soaked basmati rice and chicken broth as needed; cook until rice is done.

Prepare the dum layer with red food color, lemon juice, small charcoal, and cooking oil; cover for 5 minutes to infuse smoke aroma.

For the daqoos sauce, blend tomatoes, garlic, green chili, coriander leaves, and salt.
