Servings4
1/2 kg chicken
3 tablespoons black pepper
2 tablespoons coriander
1.5 tablespoons cumin
1 tablespoon paprika powder
0.5 teaspoon turmeric powder
1/4 cup olive oil
salt to taste
juice of 1 lemon
1 medium-sized onion, sliced
15-20 almonds, blanched
1 medium-sized onion, chopped
3-4 green chilies, slit
5-6 cloves garlic, crushed
2 dried lemons
1 tablespoon garam masala powder
4 cups soaked basmati rice
water as needed
1

Prepare 1/2 kg of chicken pieces by making cuts on them.

2

Make a spice mix using 3 tablespoons black pepper, 2 tablespoons coriander, 1.5 tablespoons cumin, 1 tablespoon paprika powder, and 0.5 teaspoon turmeric powder. Grind this mixture and place it in a bowl.

3

Add 1/4 cup olive oil to the spice mix and mix well.

4

Rub the spice mixture over the chicken, reserving some for later. Add salt to taste and juice of 1 lemon. Mix everything well and marinate the chicken for 1 hour.

5

In a pot, heat 1/4 cup oil and add 1 medium-sized sliced onion. Fry until it turns golden brown.

6

Add 15-20 blanched almonds to the onions and fry for an additional 2-3 minutes. Remove the onion and almond mixture from the pot and set aside.

7

In the same oil, add cumin, cinnamon, green cardamom, cloves, and black pepper. Sauté for 30-40 seconds.

8

Add 3-4 slit green chilies and 1 medium-sized chopped onion. Also, add 5-6 crushed garlic cloves and 2 dried lemons. Sauté for 2 minutes until fragrant.

9

Add 1 tablespoon garam masala powder and mix it with the spices.

10

Place the marinated chicken pieces in the pot and pour the reserved spice mixture with a little water over the chicken. Cover and cook on low flame for 15 minutes until the chicken is cooked through and releases its juices.

11

After 15 minutes, remove the chicken pieces from the pot. Measure 1.5 times the amount of water to the remaining spices in the pot. Add salt according to the rice and juice of half a lemon.

12

Add 4 cups of soaked basmati rice to the pot and mix everything well. Cover and cook on medium flame for at least 10 minutes until the rice is cooked.

13

While the rice is cooking, heat some oil in a pan and fry the chicken pieces on high flame until they are golden brown.

14

Once the rice is cooked, mix it gently with the spices, and place the fried chicken on top. Add the fried onion and almond mixture on top.

15

Cover the pot and let it steam for another 10-15 minutes until everything is well combined and flavors meld together.
