2 medium onions, chopped
2 cups carrots, chopped
1 medium zucchini, chopped
2 cups potatoes, diced
1 cup fresh cilantro, chopped
1 tablespoon salt
2 teaspoons hawaii spice blend (turmeric, cardamom, cumin, black pepper)
8 cups water

Fill a medium pot halfway with water.

Add 2 to 3 pieces of onion to the pot before it boils, allowing the onion to release its flavor into the water.

Once the water is boiling, add all the ingredients except for the hawaii spice and cilantro into the pot.

Cut the chicken into large pieces and add it to the pot along with zucchini, potatoes, and carrots.

Cover the pot and wait for it to boil again.

As the soup boils, skim off any foam that forms on the surface to keep the soup clear.

Lower the flame and cook the soup for 1 hour on medium heat.

After 1 hour, turn off the flame and add 1 spoon of salt and 3 spoons of hawaii spice to the pot.

Add cilantro on top of the soup and stir it in.

Cover the pot and let it sit for 15 minutes before serving.
