Start by preparing the meat: use free range chicken thighs and pork belly steaks.
Grind the chicken thighs and pork belly steaks in a meat grinder.
After the first grind, prepare the spice mix: add 1 tablespoon onion powder, 1 tablespoon ground white pepper, 1 tablespoon nutmeg powder, 0.5 tablespoon ground mace, 0.5 tablespoon salt, 2 tablespoons bread crumbs, and 0.5 teaspoon msg to the meat mixture.
Add 3 tablespoons of beef broth to the mixture.
Put on gloves and mix the meat and spices thoroughly until well combined.
Grind the mixture a second time to achieve a smooth, paste-like consistency.
Shape the mixture into frikandel shapes, pressing out any air.
If the shape is too large, cut the frikandel in half with a knife.
Prepare the smoker by cleaning the grill grate and adding wood pellets for smoking.
Set the smoker to 140 degrees Fahrenheit, but note that the actual cooking temperature may be lower.
Place the frikandel on a stainless steel rack and put it in the smoker.
Close the lid and allow the frikandel to smoke, picking up flavor from the wood pellets.
After cooking, let the frikandel rest for a few minutes before serving.
