Soak stale bread in water to soften it.
Dice up the onions and mince the garlic and parsley.
In a mixing bowl, combine the ground beef and ground pork.
Add the two eggs, minced garlic, diced onions, chopped parsley, and half of the spices (2 teaspoons of salt, 2 teaspoons of paprika, 2 teaspoons of spicy mustard, and 2 teaspoons of Maggi seasoning) to the meat.
Shred and add the smoked gouda cheese to the mixture.
Squeeze out excess water from the soaked bread and add it to the mixture.
Mix all ingredients thoroughly by hand until well combined.
Shape the mixture into patties, about the size of a sandwich roll.
Preheat a cast iron skillet over medium-high heat and add enough oil to coat the bottom.
Place the patties in the skillet and sear for 1-2 minutes on each side until browned.
Reduce the heat and cook for an additional few minutes until cooked through, adding butter if desired.
