Pour rolled oats into a dry skillet over medium heat and toast until they smell nutty and toasty.
Dump toasted oats into a large bowl.
Toast finely shredded coconut in the same skillet for 20-30 seconds, then add to the bowl with the oats.
In the same skillet, combine maple syrup, peanut butter, tahini, and coconut oil. Cook until it starts to simmer and the coconut oil is melted.
Add vanilla and salt to the mixture in the skillet, then remove from heat.
Add crunchy flax cereal and toasted sesame seeds to the bowl with oats and coconut.
Pour the glue mixture from the skillet over the dry ingredients in the bowl and mix until everything is coated and shiny.
Press the mixture firmly into a square dish lined with parchment paper, using a rubber spatula or your hands.
Bake in a 325 degree oven for about 20 minutes until brown around the edges and firm in the center.
Let cool for about 5 minutes, then use parchment paper to pull out and cool for another 10 minutes before cutting into bars.
