Preheat the oven to 350°F.
Spread oats and pecans in a single layer on a parchment-lined baking tray.
Bake for about 5 minutes, then stir gently and bake for another 5 minutes until gently toasted.
Transfer the toasted oats and pecans into a large mixing bowl and add ground cinnamon, then mix.
In a saucepan over medium-low heat, combine honey, butter, brown sugar, and vanilla, stirring until the butter melts and everything is combined into a smooth mixture.
Pour the butter mixture into the bowl with oats and pecans and mix well with a silicone spatula.
Allow the mixture to rest for 1-2 minutes, then add cranberries and chocolate chips, mixing again.
Transfer the oat mixture into a 9x9 square baking dish lined with parchment paper, pressing it tightly into the bottom with a silicone spatula.
Sprinkle flaky salt over the top, cover with aluminum foil, and chill in the refrigerator for 2 hours.
After chilling, use the parchment paper to remove the granola from the baking dish and slice into 12 equal bars.
