Irish Soda Bread

Cultural Context

Irish Soda Bread originated in Ireland in the 19th century, utilizing baking soda as a leavening agent due to the lack of yeast. Traditionally, it was made with simple ingredients, reflecting the frugality of rural life. Today, it is a staple in Irish households and is enjoyed worldwide, often served with butter or jam.

Servings4
400 ml buttermilk
1 teaspoon salt
1 teaspoon baking soda
flour
rice flour (optional)
1

Add 1 teaspoon of salt and 1 teaspoon of baking soda to the flour.

2

Sift the mixture to distribute the baking soda throughout the flour.

3

Measure out 400 ml of buttermilk, holding a little back to adjust the consistency if needed.

4

Gently fold the buttermilk into the flour mixture without overworking the dough to avoid developing gluten.

5

Prepare a baking tray with parchment paper and optionally dust it with rice flour for contrast in color.

6

Shape the dough and make a cross on top to let the fairies out, pricking each section.

7

Preheat the oven to 230° C and place a baking steel inside for even heat.

8

Add a little water to the bottom of the oven to prevent the crust from drying out.

9

Bake the bread at 230° C for about 15 minutes to activate the baking soda.

10

Lower the temperature to 190° C and continue baking for 25 to 30 minutes until done.

11

Check for doneness by tapping the bottom of the bread for a hollow sound.

12

Turn the bread upside down to cool, allowing the crumb to even out.
