1 and 1/2 cups spelt flour (190 g)
2 tablespoons corn starch
1 teaspoon baking soda
1 heap teaspoon salt
1 teaspoon caraway seeds
1/2 teaspoon salt (for sweet version)
1 tablespoon maple syrup (for sweet version)
1/2 cup raisins (for sweet version)
1 and 1/2 cups buttermilk (360 ml)

Preheat the oven to 225 C.

In a large bowl, combine all the dry ingredients: 2 and 1/2 cups all flour, 1 and 1/2 cups spelt flour, 2 tablespoons corn starch, 1 teaspoon baking soda, and salt (add caraway seeds if making a savory version).

In a large measuring cup, mix together 1 and 1/2 cups buttermilk and 1 egg.

Make a well in the center of the dry ingredients and pour in the buttermilk and egg mixture.

Use a wooden spoon to incorporate the flour into the buttermilk until it starts to come together.

Turn the dough out onto a floured surface and knead just a few times to shape it into a circle.

Cut a deep cross into the top of the dough to help it bake evenly.

Place the dough in a cast iron skillet or any baking pan.

Bake in the preheated oven for 10 minutes at 225 C, then lower the temperature to 200 C and bake for another 35 to 40 minutes until the crust is deep brown.

To test for doneness, knock on the bottom of the bread; it should sound hollow.
