Add 1 cup of warm milk to the mixer with a dough hook.
Add 14 g of active yeast, 4 tablespoons of honey, and 4 large tablespoons of soft butter to the mixer.
Add 2 eggs to the mixture.
Mix the ingredients together briefly with the mixer.
Add 450 g of spelt flour to the mixture.
Knead the dough with the mixer for 10 to 15 minutes until it becomes glossy and slightly sticky.
Prepare rings using foil by folding it and shaping it into a ring.
Whisk 1 egg in a separate bowl for egg wash.
Prepare a mix of sesame seeds and poppy seeds for topping.
Flour your hands and shape the dough into 6 or 7 balls, tucking the dough underneath to create a smooth top.
Place the shaped dough balls into the prepared foil rings.
Brush the tops of the dough balls with the egg wash, avoiding the rings.
Sprinkle sesame seeds and poppy seeds on top of the dough balls.
Preheat the oven to 180 to 200 degrees Celsius.
Place a tray filled with water at the bottom of the oven.
Bake the rolls in the oven for 15 to 20 minutes, checking after 15 minutes and rotating if necessary.
Remove the rings from the baked rolls.
