Focaccia originates from ancient Rome, where it was a staple for both the rich and the poor. Traditionally, it was baked in the ashes of the hearth and enjoyed with various toppings. Today, Focaccia is celebrated for its versatility and is often served as an appetizer or side dish across Italy and beyond, with countless regional variations.

Nutritional yeast is dairy-free while pecorino is a less expensive cheese.
Preheat the Blackstone Pizza Oven to low (around 575-600ยฐF).
Prepare fresh tomatoes by dimpled and removing moisture with a rag.
Tear tomatoes in half for different textures while cooking.
Add olive oil, salt, pepper, oregano, and garlic to the tomatoes and mix to create a marinade.
Let the tomato mixture sit to release juices.
Prepare the dough by weighing out 300 g portions and adding oil to the pan and on top of the dough.
Knead the dough until smooth and elastic, then cover with plastic to rest.
Divide the dough into balls and place in a Blackstone dough box.
Allow the dough to proof and then dimple the top before adding more oil.
Place the dough in the preheated oven and bake.
