Start by putting 3 1/2 cups of all-purpose flour into a bowl.

Add 1 teaspoon of salt to the flour.

Add 1 teaspoon of baking soda to the mixture.

For the liquid, add 1/3 cup of buttermilk powder and 1 1/2 cups of water to the dry ingredients.

Mix the dough using a spurtle until combined; the dough will be sticky.

Turn the dough out onto a floured surface and sprinkle flour on top of the dough.

Shape the dough into a ball without kneading it, using flour to manage stickiness.

Make a cross or 'X' on top of the dough, cutting about 1/2 inch deep.

Preheat the oven to 450°F and prepare a 2-quart Dutch oven by oiling it.

Transfer the dough into the Dutch oven and cover it with the lid.

Bake for 45 minutes with the lid on, then remove the lid and bake for an additional 5 minutes to brown.

Check the bread by knocking on the bottom; it should sound hollow when done.
