Cover a cast iron skillet with parchment paper.

In a bowl, whisk together 2 cups whole wheat pastry flour, 1 tsp baking soda, and 1 tsp salt.

Grate 2 tbsp cold butter into the bowl of flour, or cut it into tiny cubes and work it in with a fork.

Stir in 1 cup buttermilk and 1 tbsp molasses until combined; the dough will be very shaggy and sticky.
