Remove the end crust from the loaf.

Brew 300 ml of strong black tea with 3 tea bags in boiling water and pour over the fruit (raisins and sultanas) to soak overnight.

Drain excess tea from the soaked fruit.

Prepare a 9x4x3 inch loaf tin with a cake liner or parchment paper.

Mix self-raising flour, 1 tablespoon baking powder, a pinch of salt, and 5 g of mixed spice in a bowl.

Add sugar to the dry ingredients and mix well.

Beat 1 egg and mix with 100 ml of dark tea.

Combine the egg mixture with the dry ingredients and add some of the drained tea from the fruit.

Stir in the soaked fruit until well mixed.

Place the mixture in the prepared loaf tin and insert a coin wrapped in parchment paper.

Preheat the air fryer oven to 140°C (fan-assisted 160°C).

Bake for 1 hour and 15 minutes, covering with foil if it starts to brown too much.
