1

Soak the mixed dried fruit (raisins and sultanas) in 150 ml of Guinness and 150 ml of Irish whiskey overnight.

2

Preheat the oven to 150°C (300°F).

3

In a mixing bowl, add 200 g of butter and 200 g of soft brown sugar; whisk on medium speed for about 5 minutes until light and fluffy.

4

Gradually add 4 large eggs to the mixture on low to medium speed, mixing until combined after each addition.

5

Add the flour and almond flour to the mixture and mix until nicely combined.

6

Stir in the soaked fruit mixture along with the zest and juice of 1 orange and 1 lemon, and 100 g of chopped almonds; mix well.

7

Prepare a 20 cm (8 inch) cake tin by greasing it and lining the bottom with parchment paper; also line the sides with a strip of parchment paper.

8

Pour the batter into the prepared cake tin and smooth the top with a spatula.

9

Bake in the preheated oven for about 3 to 4 hours, checking for doneness with a skewer.

10

Once baked, remove the cake from the oven and poke holes in the top with a skewer; drizzle 2-3 tablespoons of whiskey over the top while the cake is still warm.
