Slice a yellow onion using a mandolin slicer, being careful not to cut yourself.
Peel the potatoes and place them in a bowl with cold water.
Wash the potatoes again in cold water.
Slice the potatoes very thinly with the mandolin slicer and place them in cold water to stop oxidation and remove extra starch.
In a large skillet, cook the bacon over medium heat until not brown and crispy, just warm.
Add the thinly sliced onions to the skillet and cook on low for about 5 minutes until caramelized.
Add the sliced potatoes to the skillet with the onions, mixing them together without cooking them all the way through.
Season the potatoes with 1 and 1/2 teaspoons of salt and 1/4 teaspoon of black pepper, then mix well and let cool.
Spray a 9-inch tart pan with cooking spray.
Roll out the pie dough to fit the tart pan, pressing it down gently and pinching the edges thicker if desired.
Preheat the oven to 425°F.
Bake the pie crust in the preheated oven for about 10 minutes.
Layer the bacon and some of the cheese in the tart pan, followed by the potato mixture, continuing to layer until finished.
Pour in half a cup of heavy cream over the layered ingredients.
Bake the pie in the oven at 425°F for about 15 minutes, then lower the temperature to 350°F and bake for an additional 25 minutes.
Let the pie cool down for a bit before slicing.
Garnish the pie with sliced green onions or dill if desired.
