Sun-dried tomatoes provide intense flavor, while canned tomatoes are budget-friendly.
Chop fresh rosemary, using about 1 teaspoon for the dough and 2 teaspoons for the topping.
Add 1 cup of lukewarm water and 1/3 cup of olive oil to the bread machine.
Add 2 teaspoons of sugar and 1 teaspoon of salt to the machine.
Fluff up 3 cups of bread flour and add it to the machine, followed by 1 teaspoon of bread machine yeast.
Select the dough cycle on the bread machine and start it.
Check the consistency of the dough after a few minutes and add warm water if needed.
Once the dough is the right consistency, add the coarsely chopped rosemary and let the machine finish its cycle.
Prepare the topping by combining 1/4 cup of olive oil, 1/4 teaspoon of kosher salt, 2 teaspoons of coarsely chopped rosemary, and 2 minced garlic cloves in a pan over medium heat until fragrant.
Cut 15-20 grape tomatoes in half and sprinkle with salt and pepper, then set aside.
Preheat the oven to 400ยฐF.
Grease a 9x13 metal pan with olive oil.
Once the dough cycle is complete, remove the dough from the machine and press it into the greased pan, making indentations with your fingertips.
Cover the dough and let it rise for about 30 minutes until doubled in size.
Press the halved grape tomatoes into the dough, spacing them evenly.
Drizzle the garlic rosemary oil over the top of the dough.
Sprinkle shredded Parmesan cheese over the top to taste.
Bake in the preheated oven for about 20 minutes until golden brown.
Cool for about 20 minutes before slicing and serving.
