Combine 290 grams of water and 7 grams of instant dry yeast in a bowl.
Add 10 grams of sugar and mix gently.
Let the mixture sit for 30 minutes.
After 30 minutes, add 400 grams of all-purpose flour, 7 grams of salt, and 30 grams of olive oil.
Mix until a dough forms and knead for about 4 minutes.
Cover the dough and let it rise for 30 minutes.
After the first rise, let it rise again for another 30 minutes.
Preheat the oven to 190-200ยฐC (374-392ยฐF).
After the second rise, shape the dough and let it rise for an additional 40-50 minutes.
Drizzle with olive oil and sprinkle with fresh or dried rosemary before baking.
Bake for 20-23 minutes, checking based on your oven specifications.
