Soak 2 kg beef in a mixture of turmeric, salt, and vinegar water for 30 minutes and then wash it well.

In a 5-liter pressure cooker, add crushed ginger and garlic and sauté them.

Add more oil than usual for better taste while sautéing.

Once the ginger and garlic are sautéed, add sliced onions, green chilies, and curry leaves; sauté until golden brown.

Add 1/2 tsp turmeric powder and 4 tbsp red chili powder (total) for spiciness according to your taste.

Add 4 tbsp coriander powder and 1 tbsp crushed black pepper; sauté on low to medium flame to avoid burning the spices.

Add the soaked and washed beef to the spices and sauté for a couple of minutes until well mixed.

Add 1 cup of water to the mixture, ensuring not to add too much as beef will release water during cooking.

Add salt to taste, starting with 1 tbsp, and adjust later if needed.

Cover the pressure cooker and cook on high flame until it whistles, then reduce to medium flame and cook for a total of 7-8 whistles.

Let the pressure cooker cool down completely before opening to allow the beef to cook in the gravy.
