Prepare the spring roll wrappers and slice banana blossom and pork skin.
Cook shrimp in hot water until just cooked, leaving the shell on until ready to wrap.
Cook pork skin in the same water until soft, then drain and rinse.
Cook ground pork in a tablespoon of vegetable oil until fully cooked, then mix in the pork skin.
Season the cooked meat with lemon, fish sauce, and roasted rice powder.
Mix all vegetables together, including bean sprouts, lettuce, and cilantro.
Soak rice paper in warm water until pliable, then lay it on a clean surface.
Fill the rice paper with a mixture of rice noodles, shrimp, ground pork, and vegetables.
Wrap the rice paper tightly around the filling.
Prepare the dipping sauce by melting sugar, then adding water, lemon, fish sauce, MSG, roasted chili, and garlic.
Taste and adjust the sauce as needed.
