1 stick of finely chopped celery
3 crushed cloves of garlic
0.5 cups semolina
1 teaspoon paprika
1 teaspoon ground coriander
1 teaspoon caraway seeds
1 tablespoon tomato paste
1 teaspoon harissa
1 lemon
6 tablespoons olive oil
salt
black pepper
1 liter of water

Heat 6 tablespoons of olive oil in a pan.

Add in the finely chopped onion and saute gently for about 8 to 10 minutes until just starting to turn brown at the edges.

Add in the spices (paprika, ground coriander, caraway seeds), tomato paste, and harissa; mix well and season with salt and pepper.

Add in the finely chopped celery and crushed garlic; stir fry for just 1 minute.

Add 1 liter of water and bring to a boil, then allow to simmer for about 20 minutes.

Prepare the lemon by cutting a couple of slices for decoration and dicing the rest, removing any seeds.

After 20 minutes, add in the semolina and mix well; continue cooking for a further 10 minutes.

After about 5 minutes, the soup will thicken up nicely.

After 10 minutes, add in the diced lemon, stir, and cook for a further 5 minutes before serving.

Sprinkle with parsley and serve with a lemon slice and a big chunk of bread.
