1 teaspoon turmeric

1 tablespoon ginger, minced
2 tablespoons tomato paste
4 cups water
2 medium potatoes, diced
1/2 cup dry apricots, chopped
1/2 cup candy fruits, chopped
1/4 cup fresh coriander, for garnish

Welcome to the video, today we're making Tunisian spiced lamb shank.

Start by sealing the lamb shank in a splash of olive oil, seasoning with salt and black pepper.

Smash garlic cloves and add them to the pot without peeling.

Dice the onion into large pieces and add it to the pot along with a cinnamon stick and bay leaf.

Add half of the green capsicum to the pot now, saving the rest for later.

Add half of the red capsicum now, saving the rest for later as well.

Add spices: curry powder, turmeric, harissa spices, ginger, and coriander to the pot.

Add tomato paste and a splash of water or stock (chicken or vegetable) to the pot.

Place the sealed lamb shank into the pot and add enough water to cover it completely.

Cover the pot and let it simmer for 1.5 to 2 hours.

After 1.5 hours, check the lamb; it should still be tough but cooking well.

Add potatoes and the remaining capsicum to the pot and continue to simmer.

Prepare rice as a side dish by washing it and adding it to a pot with water to cook.

Once the lamb is tender, check for seasoning and add salt if necessary.
