Cedar Plank Salmon

Cultural Context

Cedar plank salmon has roots in Native American cooking traditions, where fish was often cooked on wooden planks over open flames. This method infuses the salmon with a subtle smoky flavor while keeping it moist. Today, this dish is popular in coastal regions, especially in Norway, where fresh salmon is abundant. It's a favorite for summer barbecues and gatherings, showcasing the simplicity and richness of the ingredients.

Zest a few oranges and set aside.

2

Heat a pan on the stove and add a little oil.

3

Add garlic to the pan.

4

Cut up and squeeze juice from 4 oranges into the pan, ensuring to get all the juice out.

5

Add 1/4 cup of soy sauce to the orange juice in the pan.

6

Add a couple of slices of jalapenos to the pan.

7

Add fresh cracked black pepper to taste.

8

Add 1/4 cup of honey to the mixture and mix well.

9

Add 1 to 2 tablespoons of Dijon mustard and incorporate it into the mixture.

10

Add 1 to 2 tablespoons of brown sugar depending on desired sweetness and mix well.

11

Bring the mixture to a low simmer for about 10 minutes until it thickens, then remove jalapenos if desired.

Remove the glaze from heat and let it rest.

13

Toast cedar planks over open flame for about 30 seconds to a minute without soaking them beforehand.

14

Brush the top side of the toasted cedar planks with oil.

15

Place salmon fillets on the cedar planks.

16

Season the salmon with granulated garlic and fresh dill.

17

Place two slices of orange on each piece of salmon.

18

Set the grill to 375°F and ensure the cedar planks are placed indirectly, away from the flame.

19

Close the grill lid and cook for about 30 minutes, checking the temperature.

20

At around 30 minutes, check the salmon temperature; it should be around 120°F.

Remove the orange slices from the salmon and start glazing the salmon with the prepared glaze.

22
