In a large bowl mix the flour, salt, and oil together until well combined

Add the water slowly and knead until a firm dough is formed then cover the dough and allow to rest for 10-15 minutes

Divide the dough into equal pieces and create smooth round balls

Lightly rub a clean surface with a little bit of oil then take each of the dough ball and roll the dough into a small, circular-shaped disc – the puri should be about 1mm thick

Heat up the oil on medium until hot

Drop one puri into the oil and allow the puri to start rising slowly then once the puri rises use the ladle to push it down and allow it to puff up

When the puri has puffed up completely flip and cook the other side for 30 seconds until golden brown

Serve with chana curry and enjoy!
