Sweet Puri

2.5 cups water
1 and 1/4 cup sugar
10 saffron strands
1 tsp elachi powder
1/2 cup wheat flour

Boil 2.5 cups of water, add 1 and 1/4 cup sugar and 10 saffron strands, let water reduce.

Add 1 tsp elachi powder. Once it thickens to string consistency, turn off heat and set aside.

For the puri, mix water, salt, and 1/2 cup wheat flour to knead the dough.

Apply ghee and knead again, cover and keep aside for 15 minutes.

Uncover the dough, make round balls for puri and roll them out.

Roll all puris and keep them covered with a cloth or plate.

Deep fry the puris one by one as shown.

Place the puris in the sugar syrup as they get done.

Press all puris gently with a spoon and let them rest for 5 hours in syrup if needed.

After 5 hours, Sweet Paakada Puri is ready!
