Quipes, also known as Kebbe or Kibbeh, is a traditional dish from Libya, often enjoyed during family gatherings and celebrations. It reflects the rich culinary heritage of the region, combining spices and grains with meat. Today, variations of Kibbeh can be found across the Middle East, each with unique regional twists, making it a beloved dish worldwide.

Poner en remojo 4 tazas de trigo por 4 horas o durante la noche.
Colar el trigo para que toda el agua salga, presionando con un cucharón.
Hacer un sofrito con 1/4 taza de cebolla, pimiento, y cilantro, o usar media taza de sofrito ya hecho.
Agregar 3 hojas de albahaca, 1 cucharada de pasta de ajo, 1 cucharadita de orégano, 1 cucharada de nuez de pollo, media cucharada de sal, y 1/4 cucharadita de pimienta al sofrito.
Licuamos la mezcla y luego agregamos 5 cucharones de trigo, licuando hasta que se vuelva una pasta.
Agregar toda la mezcla al trigo y amasar por unos minutos.
Agregar media libra de carne molida y seguir amasando.
Formar una bolita con una pequeña porción de la masa; si se queda compacta, la masa está lista.
Cubrir la masa con papel plástico y refrigerar mientras se prepara la carne molida.
Cocinar 1 1/2 libra de carne molida con media cebolla picada, pimientos de colores, 1 cucharada de pasta de ajo, 1 cucharadita de orégano, 1 cucharada de nuez de pollo o de res, media cucharada de sazón completo, 1 sazón achiote, 2 cucharadas grandes de pasta de tomate, y 1 taza de agua.
Agregar una hoja de laurel a la carne.
Cocinar a fuego medio hasta que la carne esté bien cocinada y sin grumos.
Untarse las manos de aceite y dar forma a los quipes, mostrando dos maneras de hacerlo.
Llevar los quipes al congelador para que estén listos para freír.
Freír los quipes en aceite caliente por 4 a 5 minutos, dejando reposar 5 segundos antes de agregar más quipes.
Evitar mover los quipes hasta que estén dorados por fuera.
