4 salmon fillets (6 oz each)
1/4 cup unsalted butter
4 cloves garlic, minced
1 cup cherry tomatoes, halved
1/2 cup heavy cream
1/2 cup spinach, chopped
1/4 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Fresh basil for garnish
1

Preheat your oven to 400°F (200°C).

2

In a large oven-safe skillet, melt the butter over medium heat.

3

Add the minced garlic and sauté for about 1 minute until fragrant.

4

Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

5

Pour in the heavy cream and bring to a simmer, then add the chopped spinach and Parmesan cheese, stirring until the cheese is melted and the spinach is wilted.

6

Season the sauce with Italian seasoning, salt, and pepper to taste.

7

Push the sauce to the side of the skillet and place the salmon fillets skin-side down in the skillet.

8

Spoon some of the sauce over the salmon fillets.

9

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

10

Remove from the oven and garnish with fresh basil before serving.
