Tuscan Butter Salmon

4 salmon fillets
1 tsp olive oil
1/2 tsp garlic powder
1/2 tsp ginger powder
salt and pepper to taste
1 tsp paprika powder
1 tsp lemon juice
2 tbsp unsalted butter
4 cloves garlic, minced
1/2 cup sun dried tomatoes or 10 halved cherry tomatoes
2 cups baby spinach
1/2 cup heavy cream
1 cup milk or half n half
1/2 cup grated Parmesan
1 tbsp parsley, chopped for garnish

Rinse and pat dry the salmon. In a bowl, add all the spices, olive oil, lemon juice, salt and pepper. Lightly coat the salmon with the marinade on both sides. Rub it with your hand and evenly coat the fillets with the marinade. Let it sit for 1 hour in the refrigerator.

Lightly grease the air fryer basket with cooking spray. Place salmon fillets in air fryer basket and air fry at 360°F for about 10 minutes. Flip the fillets halfway through cooking.

Heat a skillet and add butter. When butter has melted, stir in garlic and cook until fragrant, about 1 minute. Add sun dried tomatoes and season with salt and pepper. Add spinach, cook until spinach is beginning to wilt.

Stir in heavy cream and milk, Parmesan, and bring the mixture to simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3-5 minutes. Adjust the seasoning.

Place salmon fillets back to skillet and spoon over sauce. Simmer and cook for a few more minutes.

Garnish with chopped parsley and squeeze lemon on top before serving.
