1 tsp onion powder
1 tsp garlic powder
1/4 cup unsalted butter
1 tbsp olive oil
1/2 cup chopped onions
1/2 cup chopped sun-dried tomatoes
2 tbsp capers
1/2 cup heavy cream
1/4 cup shaved parmesan
1/4 cup mozzarella
1/4 cup provolone
1/2 cup spinach, chopped
fresh basil for garnish

Buy salmon in a salt water bath for 10 minutes to break down muscle fibers and pat dry.

Season the salmon with salt, pepper, Cajun seasoning, onion powder, and garlic powder on both sides.

In a pan, add 1 tablespoon of butter and a few tablespoons of olive oil, then add the salmon.

Cook the salmon for 1 minute on one side, then flip and cook for another 1-2 minutes until a nice crust forms before removing from heat.

In the same pan, add chopped onions and more butter along with garlic, and stir.

Cook the onions and garlic for a few minutes, then add chopped sun-dried tomatoes and a tablespoon of their oil.

Add chopped capers to the pan.

Pour in 1 cup of heavy cream and bring to a simmer, stirring regularly.

Add a few more sun-dried tomatoes, season with salt and pepper, and stir until the sauce is rich.

Stir in shaved parmesan and a few tablespoons of mozzarella and provolone.

Add spinach and tear basil instead of chopping to avoid bruising.

Stir the sauce, then add the salmon back in to finish cooking for 3-4 more minutes on medium-low, coating with sauce.
