Chicken breast is lower in fat, while pork loin is more economical.
Heat olive oil in a skillet over medium-high heat until shimmering.
Season pork steak with black pepper and salt.
Sear pork steak in the skillet for 4-5 minutes on each side until browned.
Remove pork steak from the skillet and set aside.
In the same skillet, add butter and melt over medium heat.
Sauté onions and garlic until translucent, about 3-4 minutes.
Add sliced mushrooms and carrots, cooking until softened, about 5 minutes.
Pour in red wine and scrape the bottom of the skillet to deglaze.
Stir in soy sauce, beef broth, bay leaves, and thyme; bring to a simmer.
Return the pork steak to the skillet, cover, and simmer for 15-20 minutes until cooked through.
Remove the pork and let it rest for a few minutes.
Reduce the sauce until slightly thickened, about 5 minutes.
Serve pork steak drizzled with red wine sauce and garnish with parsley.
