Prepare 6 pieces of cubed pork loin.
Decide to cook 3 pieces in the air fryer with almond flour for a low-carb option and 3 pieces in a skillet with gluten-free flour.
In a bowl, combine a little milk and 2 beaten eggs to create an egg wash.
In a separate bowl, mix almond flour with garlic, onion powder (about 1/4 teaspoon each), pepper, salt (about 1/4 teaspoon each), Italian seasoning (about 1/2 teaspoon), and 2 tablespoons of Parmesan cheese.
Season the cubed pork with salt and pepper on both sides.
Dip the pork steaks in the egg wash, then coat them lightly with the seasoned almond flour, pressing the mixture onto the pork.
Preheat the air fryer to 400°F and place the coated pork steaks inside, cooking for 5 minutes initially.
After 5 minutes, check the pork steaks and turn them over, cooking for an additional 6 minutes.
Prepare the gluten-free flour pork steaks by dipping them in the egg wash and coating them with gluten-free flour, then frying them in a skillet.
While frying, add some squash, okra, and green tomatoes to the skillet.
After 10-11 minutes, check the almond flour pork steaks in the air fryer, noting they may need additional cooking time and spraying with olive oil to prevent dryness.
Taste the almond flour pork steaks and compare them to the gluten-free flour ones, noting the difference in Parmesan flavor.
Serve the pork steaks over a bed of fried vegetables and add marinara sauce.
