1 cup (190 grams) red lentils, rinsed
1 small onion, chopped
2-3 tomatoes, chopped
2 teaspoons salt
1 bay leaf
1 teaspoon Kolanji (nigella seeds, black cumin, charnushka)
1 teaspoon Kashmiri chili powder (or 1/2 tsp cayenne)
1/2 teaspoon cumin seeds
1/4 teaspoon yellow mustard seeds
1/4 teaspoon brown mustard seeds
Fresh chopped coriander for garnish

Rinse the lentils and pick through them for any debris.

Put the lentils in a pot and fill with water until it just covers the lentils.

Add 1 teaspoon of salt to season the lentils.

Cook on medium heat until it starts to bubble, then turn down the heat and cook for about 10-12 minutes until the lentils soften and break.

In a separate small pan, add the onion, tomatoes, spices, and olive oil.

Cook over medium heat until the tomatoes are jammy.

Add the spiced mixture to the lentils and let it season for a few minutes.

Remove the bay leaf and add freshly chopped coriander leaves before serving.
