Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and ginger, cooking until fragrant, about 1 minute.
Add beef to the pot, browning on all sides, about 5-7 minutes.
Sprinkle in curry powder, cumin, coriander, turmeric, and cayenne pepper, stirring to coat the beef evenly.
Add diced tomatoes and cook until softened, about 3-4 minutes.
Pour in coconut milk and bring to a simmer.
Add cubed potatoes, cover, and cook until potatoes are tender, about 20-25 minutes.
Stir occasionally, adding water if needed to prevent sticking.
Season with salt and lime juice to taste before serving.
Garnish with fresh cilantro before serving.
