Add chopped carrots and potatoes; cook for another 5 minutes.
Mix in diced tomatoes, chickpeas, and spices; stir well to combine.
Pour in enough water to cover the ingredients; bring to a boil.
Reduce heat to low; cover and simmer for 1.5 to 2 hours until lamb is tender.
Check occasionally, adding more water if necessary to prevent sticking.
Once cooked, stir in chopped parsley and adjust seasoning with salt and pepper.
Serve hot with a squeeze of lemon juice over the top.
