1

Marinate beef with yogurt, garlic paste, ginger paste, green chilies, and salt for at least 2 hours.

2

Slice onions thinly and fry in oil and ghee until golden brown; set aside.

3

Soak basmati rice in water for 30 minutes, then drain.

4

In a large, heavy-bottomed pot, layer half of the soaked rice at the bottom, followed by marinated beef, fried onions, chopped coriander, and mint leaves.

5

Layer the remaining rice over the beef and herbs in the pot.

6

Add whole spices, saffron dissolved in warm water, and remaining fried onions on top of the rice.

7

Pour water over the rice, ensuring it's just above the level of the rice.

8

Cover the pot tightly with a lid or dough to trap steam.

9

Cook on low heat for 45-60 minutes, allowing the flavors to meld.

10

Remove from heat and let it rest for 10-15 minutes without lifting the lid.

11

Gently fluff the rice with a fork before serving.
