Irish Soda Bread

Cultural Context

Irish Soda Bread originated in Ireland in the 19th century, utilizing baking soda as a leavening agent due to the lack of yeast. Traditionally, it was made with simple ingredients, reflecting the frugality of rural life. Today, it is a staple in Irish households and is enjoyed worldwide, often served with butter or jam.

4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons Kerrygold Irish butter
1 and 3/4 cups buttermilk
1 egg (optional)
1

Add 4 cups of all-purpose flour to a bowl, reserving some for the board.

2

Mix in 1 teaspoon of salt and 1 teaspoon of baking soda.

3

Cut in about 2 tablespoons of Kerrygold Irish butter into the flour mixture until it resembles small pieces.

4

Make a well in the center of the mixture and pour in 1 and 3/4 cups of buttermilk.

5

If using, add 1 egg to the mixture.

6

Start working the mixture together, adding reserved flour as needed to form a dough.

7

Knead the dough gently until it forms a small ball, being careful not to over-knead.

8

Flip the dough over to create a smooth top and tidy it up by tucking in the edges.

9

Place the dough onto a floured baking sheet.

10

Preheat the oven to 425°F.

11

Cut a cross into the top of the dough to allow steam to escape.

12

Bake in the preheated oven at 425°F for 15 minutes.

13

After 15 minutes, reduce the oven temperature to 400°F and continue baking for an additional 30 minutes.

14

Remove the bread from the oven and let it cool completely before slicing.
