Preheat the oven to 170-180°C (275°F).

Make a few incisions in the meat to insert the garlic cloves (peeled and halved).

In a bowl, mix turmeric, tomato paste, paprika, saffron (optional), ground thyme, ground rosemary, black pepper, salt, and lemon juice to prepare the marinade.

Marinate the meat and place it back into the tray, adding fresh rosemary, thyme, and lemon. Cover with baking paper and aluminum foil, and cook in the center of the oven for at least 4 hours at a low temperature.

After two hours, remove the meat from the oven, take out the sauce that has been released, and put the meat back into the oven.

In a saucepan, add the rice, water, salt, and 3 tablespoons of oil, along with 1 teaspoon of turmeric. Cook for 5 minutes, then rinse with cold water.

Place the rice in the steamer basket and steam for 10 minutes.

Transfer the rice to a bowl, add the sauce from the meat, place it back into the pot, and finish cooking.

In a pan, add some oil, add the dried fruits, and sauté until they are golden, stirring occasionally.
