1

Prepare the ingredients: 15 egg yolks, 125 grams of sweet pumpkin jam, 125 grams of ground almonds, 300 grams of sugar, 200 ml of water, 1 teaspoon of powdered sugar, 3 lemon peels, and 1 cinnamon stick.

2

In a large pot, combine 200 ml of water and 300 grams of sugar, and stir.

3

Add the 3 lemon peels and the cinnamon stick to the pot and bring to a boil.

4

Once boiling, let it boil for 3 minutes to reach the 'pearl point'.

5

After 3 minutes, remove the cinnamon stick and lemon peels from the pot.

6

Add the ground almonds and sweet pumpkin jam to the pot and stir well.

7

Bring the mixture back to a boil, stirring constantly, for another 3 minutes.

8

After 3 minutes, turn off the heat and demonstrate the 'road point' by running a spoon through the mixture.

9

Let the mixture cool for at least 5 minutes.

10

Preheat the oven to 170°C (338°F).

11

Pass the egg yolks through a sieve using a fork to break them up, discarding the film that remains in the sieve.

12

Grease a 20 cm round baking pan with butter, cut a circle of parchment paper for the bottom, grease it again, and dust with flour.

13

Incorporate the cooled mixture with the egg yolks, stirring continuously.

14

Return the mixture to the heat until it thickens, stirring constantly, and remove before it boils.

15

Pour the mixture into the prepared baking pan.

16

Bake in the preheated oven for about 30 minutes.

17

Check doneness with a toothpick; it should come out clean but the dessert should not be overcooked and should remain slightly moist.

18

Let it cool for 5 minutes before unmolding.

19

Run a knife around the edges of the pan, remove the parchment paper, and invert onto a plate.

20

Dust with powdered sugar for decoration.
