1 tablespoon ginger
1 teaspoon fenugreek
1 teaspoon turmeric
1 teaspoon Kashmiri chili powder
1 teaspoon cumin
1 teaspoon garam masala
1 teaspoon salt

Wash the fresh mature spinach well and remove most of the stalks to avoid bitterness.

Melt butter ghee in a pot.

Add half a teaspoon of salt to the melted ghee.

Add a bunch of baby spinach and the washed mature spinach to the pot.

Simmer the spinach for about 30 to 45 minutes, stirring occasionally.

In another pan, cook chopped onions in ghee for about 50 minutes until they are dark brown, adding a little water if they start to burn.

Add a de-seeded tomato to the onions and cook for 2 to 3 minutes until it softens.

Minced garlic, green chilies, and ginger are added to the onion and tomato mixture and cooked for a few minutes.

Add half a teaspoon of turmeric and half a teaspoon of cumin to the mixture and stir well.

Combine the cooked spinach with the onion and tomato mixture and blend until smooth if desired.
