Cover the pot and bring to a rolling boil, then reduce the heat to the lowest setting and allow to simmer for about 10-15 minutes until the potatoes are fork-tender.
Scoop some of the potatoes into a bowl for the hand mixer method.
Use a hand mixer to mash the potatoes until smooth, being careful not to over-mash.
Add butter and a little full cream milk to the mashed potatoes and mix again with the hand mixer for a few seconds until creamy.
Transfer the hot Irish potatoes into a food processor, ensuring to drain the water first.
Blend the potatoes in the food processor for about 15 seconds until silky smooth.
Add tiny bits of milk and butter to the food processor and blend for another 15 seconds.
Check the consistency of both the hand-mixed and food-processed mashed potatoes using the back of a spoon.
Serve the mashed potatoes in a bowl, making a well in the center, and add a protein of choice and gravy on top.
