Ukrainian Braised Pork, or 'Svinina', is a beloved dish that showcases the country's rich agricultural heritage. Traditionally served during family gatherings or festive occasions, it reflects the hearty, comforting nature of Ukrainian cuisine. The dish pairs beautifully with creamy mashed potatoes, a staple in many Ukrainian households. Today, variations exist across Eastern Europe, with different meats and spices, but the essence of slow-cooked, flavorful pork remains cherished.

Cut pork shoulder into one inch cubes.
Preheat large frying pan over medium-high heat and drizzle with cooking oil.
Season pork cubes with salt and brown them in batches for 7-8 minutes until nicely browned.
Transfer browned pork into a braising pot.
In the same pan, add diced mushrooms and brown for 5-6 minutes.
Add grated carrots and diced onion, sauté for 3-4 minutes until tender.
Stir in minced garlic and cook for 1 minute.
Add spices: ground coriander, ground cumin, smoked paprika, and black pepper; stir to toast the spices.
Add flour to the mixture and stir.
Pour in 6 cups of water, sour cream, ketchup, and salt; whisk together.
Bring the mixture to a boil, then cover with a lid slightly ajar and reduce heat to low to simmer for about 1.5 hours until pork is tender.
Peel and cut potatoes into chunks, place in a large pot with water and 2 teaspoons of salt.
Bring potatoes to a boil over high heat, cover with a lid, and cook for 15 minutes until fork tender.
Drain potatoes and transfer to a bowl; add unsalted butter and mash while adding heavy cream as needed for desired consistency.
Add fresh dill and parsley to the pork before serving.
Plate mashed potatoes and top with braised pork and sauce, garnish with fresh herbs.
