Preheat the oven to 400°F (200°C).
Peel and chop the potatoes into chunks.
Boil the potatoes in salted water until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Mash the potatoes until smooth and let cool slightly.
In a skillet, melt butter over medium heat and sauté chopped onion until golden, about 5-7 minutes.
Add minced garlic and cook for another minute until fragrant.
Combine the mashed potatoes with sautéed onions, salt, black pepper, and chopped parsley.
Roll out the puff pastry on a floured surface to about 1/8 inch thick.
Cut the pastry into squares or circles, about 4-6 inches in diameter.
Place a spoonful of the potato mixture in the center of each pastry piece.
Fold the pastry over to create a pocket and seal the edges by pressing with a fork.
Brush the tops with beaten egg for a golden finish.
Sprinkle with bread crumbs, caraway seeds, and paprika if desired.
Place the knishes on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, until golden brown and puffed up.
