In a bowl, mix dry yeast, flour, warm milk, and sugar to create a sponge and set aside for 15–20 minutes.

Prepare the filling by thawing frozen cherries, draining excess liquid, and patting them dry; add 1–2 teaspoons of cornstarch if needed.

Combine the sponge with the remaining flour and knead into a dough using a stand mixer for about 10 minutes.
