Canola oil is less expensive while still providing good flavor.
Wash 2 pounds of small potatoes (mix of red and yellow).
Bring a medium pot of water to boil and add 2 teaspoons of salt.
Carefully add the potatoes, reduce heat to a low boil, and cook for about 25 to 30 minutes until tender.
Drain the potatoes and preheat the oven to 450°F.
Transfer the potatoes onto a lined baking sheet, evenly spaced.
Mash the potatoes to about 1/2 inch thickness using a potato masher or the smooth side of a drinking glass.
Drizzle olive oil over the tops and season generously with garlic salt and black pepper.
Bake at 450°F for about 15 minutes until the bottoms are golden.
Flip the potatoes, season with more garlic salt and black pepper, drizzle with olive oil, and bake for another 12 to 15 minutes until crisp and golden brown.
Sprinkle 3/4 cup of Parmesan cheese over the tops and bake for another 3 minutes to melt the cheese.
Sprinkle fresh parsley over the potatoes before serving.
