Sift 1/2 kg flour into a bowl.
Add 2 tablespoons sugar and 1 teaspoon salt to the flour.
Add 6 tablespoons melted ghee and 3 tablespoons solid ghee to the mixture.
Mix these ingredients well.
Add 1 cup room temperature milk and knead the dough.
Add water (3/4 to 1 cup) as needed to make a soft dough.
Grease the dough with 1 tablespoon oil and cover it for 30-40 minutes.
Prepare the special sauce by mixing 1 cup mayonnaise with various spices and sauces.
Add 1/2 teaspoon garlic powder, 1/2 teaspoon white pepper, 1/2 teaspoon Kashmiri red chili powder, 1/4 teaspoon salt, and 1 teaspoon mixed herbs or parsley to the mayonnaise.
Incorporate 1 tablespoon peri peri sauce, 1 tablespoon lemon juice, 1 teaspoon oyster or Worcestershire sauce, 1 tablespoon hot sauce, 3 tablespoons tomato ketchup, and 1 teaspoon mustard paste into the mixture.
Mix well and add 3 to 4 tablespoons finely chopped cucumber or fresh cucumber.
Refrigerate the sauce until use.
For the beef patty, use 1 kg minced meat with 80% meat and 20% fat.
Add spices: 1 teaspoon coriander powder, 1 teaspoon cumin powder, 1 tablespoon crushed red chili, 1 tablespoon ground black pepper, and 1 teaspoon salt.
Include 2 teaspoons red chili powder, 1 tablespoon Kashmiri red chili powder, 1 teaspoon mixed herbs or parsley, 2 tablespoons lemon juice, 1 teaspoon finely chopped green chili, and 1 tablespoon ginger-garlic paste.
Mix the meat thoroughly and knead for 4-5 minutes to incorporate spices and fat.
Let the mixture marinate for 1 to 1.5 hours.
After resting, knead the dough again and divide it into 8 equal-sized balls.
Grease the dough balls with ghee and roll out each ball into a thin sheet.
Cut the sheet into thin strips and layer them, then roll them up to form a paratha.
Let the rolled paratha rest for 10-15 minutes.
Form equal-sized meatballs (about 120-125 grams each) from the marinated meat.
Flatten the meatballs to the desired thickness for the smash burger.
Heat oil or ghee in a pan over medium heat.
Reduce the flame to low and cover the pan, cooking the paratha for 3-4 minutes until golden brown.
Flip the paratha and cook for another 5-6 minutes until both sides are golden and cooked through.
